# On Chickens and Capercaillies
In the region of Mozambique, there are chickens with black flesh; indeed, their feathers, meat, and bones are so dark that, when cooked, they appear to have been boiled in ink. Nevertheless, they are exceptionally flavorful and are considered far superior to all other varieties.
While illustrations of these Indian chickens are found in the second volume of my *Ornithology*, we provide here an image of an Indian chicken’s egg so that the reader may contemplate the differences between it and the egg of our local hens.
